Ingredients list for Roast Potatoes

  • 4 Potatoes
  • to taste Lemon Juice
  • 1 teaspoon Peppercorns crushed
  • a few sprigs Fresh coriander leaves
  • 1 tablespoon Lemon juice

Method

  1. Scrub and wash potatoes and cut into quarters without peeling them. Put the potato quarters on a twelve inch square piece aluminium foil. Sprinkle salt, crushed peppercorns, chopped coriander leaves and lemon juice.
  2. Wrap the foil properly around the potatoes. If required double wrap. Put it on live charcoals in a barbecue. Also put some live charcoals on top of the packet. Cook for fifteen minutes. Serve hot.
