Ingredients list for Prawn Stew
- 1 cup Prawns (medium) shelled and deveined
- 2 tablespoons Butter
- 1 cup Onions finely chopped
- 1 cup Leek finely chopped
- 8-10 Potatoes halved
- 1 cup White wine
- to taste Salt
- 2 cups Fish stock
- ½ cup Fennel bulb chopped
- 1 teaspoon Paprika powder
- ½ cup Fresh cream
- 1 tablespoon Fresh parsley chopped
Method
- Heat butter in a non-stick pan. Add onion and sauté for 1-2 minutes.
- Add leek and sauté for 2 minutes. Add potatoes and mix well. Add wine and mix.
- Add salt and fish stock, mix, cover and cook for 5-6 minutes.
- Add prawns and mix well. Add fennel, mix well, cover and cook on low heat for 2-3 minutes.
- Add paprika powder and cream, mix well and cook for 2 minutes.
- Add parsley and mix well.
- Serve hot.
