Ingredients list for Polenta Pesto Chicken
- 400 grams Boneless chicken breasts cut into thick strips
- 1 cup Polenta
- 5 tablespoons Pesto sauce
- to taste Salt
- 2 teaspoons Lemon juice
- 2 Eggs beaten
- for deep-frying Oil
Method
- Put chicken in a bowl, add pesto sauce, salt and lemon juice, mix and set aside to marinate for thirty to forty minutes.
- Spread polenta evenly on a plate. Heat sufficient oil in a kadai.
- Dip chicken pieces in the beaten eggs and roll in polenta. Slide them into the hot oil and deep-fry till golden brown and crisp.
- Drain on absorbent paper and serve hot.
