Ingredients list for Polenta Pesto Chicken

  • 400 grams Boneless chicken breasts cut into thick strips
  • 1 cup Polenta
  • 5 tablespoons Pesto sauce
  • to taste Salt
  • 2 teaspoons Lemon juice
  • 2 Eggs beaten
  • for deep-frying Oil

Method

  1. Put chicken in a bowl, add pesto sauce, salt and lemon juice, mix and set aside to marinate for thirty to forty minutes.
  2. Spread polenta evenly on a plate. Heat sufficient oil in a kadai.
  3. Dip chicken pieces in the beaten eggs and roll in polenta. Slide them into the hot oil and deep-fry till golden brown and crisp.
  4. Drain on absorbent paper and serve hot.
