Plantain Fry

Raw banana gravy flavoured with coconut, onion and fennel seeds. Coconut is ground with onions, fennel seeds and red chilli powder and cooked with raw bananas.

Ingredients 

  • 1 raw banana, peeled and sliced
  • 1 coconut, scraped
  • 1 large onion,roughly chopped
  • 2 tablespoons fennel seeds
  • 1 tablespoon red chili powder
  • Salt to taste
  • Oil for shallow frying

Method

  1. Peel, slice and cut raw banana into four pieces.
  2. Grind the coconut, onion, fennel seeds and red chili powder into fine paste with sufficient water and add salt to it.
  3. Marinate the raw banana with the prepared paste for 15-20 minutes.
  4. Heat oil in a non-stick pan. Place the banana slices and shallow fry till golden brown and crisp.
  5. Serve hot.
