Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Pineapple Shikanji Recipe

  • Pineapple peeled 1 medium

  • Fresh mint leaves 1/2 cup

  • Powdered sugar 1/2 cup

  • Chaat masala 1 tablespoon

  • Dried mango powder (amchur) 1 teaspoon

  • Roasted cumin powder 1 teaspoon

  • Black salt 1 teaspoon

  • Juice of 2 lemons

  • Ice cubes 6-8

  • For garnishing

  • Pineapple wedges 4 thick

  • Lemon slices 4

  • Fresh mint sprigs 4

Method

Step 1

Heat a non-stick grill pan. Cut pineapple into thick slices and remove the core. Place the slices in the pan and grill, flipping sides, till evenly golden from both sides.

Step 2

Transfer the grilled slices into a mixer jar and let them cool. Add mint leaves, powdered sugar, chaat masala, dried mango powder, roasted cumin powder, black salt, lemon juice, ice cubes and 2 cups of water and blend.

Step 3

Pour the shikanji into 4 tall glasses.

Step 4

Decorate each glass with a pineapple wedge, a lemon slice and a mint sprig and serve chilled.
