Ingredients list for Pineapple Shikanji
- 1 medium Pineapple peeled
- 1/2 cup Fresh mint leaves
- 1/2 cup Powdered sugar
- 1 tablespoon Chaat masala
- 1 teaspoon Dried mango powder (amchur)
- 1 teaspoon Roasted cumin powder
- 1 teaspoon Black salt
- Juice of 2 lemons
- 6-8 Ice cubes
- For garnishing
- 4 thick Pineapple wedges
- 4 Lemon slices
- 4 Fresh mint sprigs
Method
- Heat a non-stick grill pan. Cut pineapple into thick slices and remove the core. Place the slices in the pan and grill, flipping sides, till evenly golden from both sides.
- Transfer the grilled slices into a mixer jar and let them cool. Add mint leaves, powdered sugar, chaat masala, dried mango powder, roasted cumin powder, black salt, lemon juice, ice cubes and 2 cups of water and blend.
- Pour the shikanji into 4 tall glasses.
- Decorate each glass with a pineapple wedge, a lemon slice and a mint sprig and serve chilled.
