Ingredients list for Pineapple Pulao
- 1 1/2 cups Basmati rice soaked
- 3 slices Tinned pineapple
- 6 tablespoons Castor sugar (caster sugar)
- 2 inch sticks Cinnamon
- 2-3 tablespoons Cashewnuts chopped
- 2 tablespoons Raisins soaked and drained
- 1/2 teaspoon Vanilla essence
Method
- Heat a deep non stick pan, add castor sugar and cook stirring continuously till it caramelizes.
- Cut pineapple slices into medium cubes and add to the pan and mix. Add cinnamon and mix and saute for 3-4 minutes.
- Add cashewnuts and mix. Add raisins and mix. Drain and add rice and mix well. Add 3 cups water and mix. Add vanilla essence and mix.
- Cover and cook on high heat for 8-10 minutes. Check if the rice is done. If it is not completely cooked, sprinkle a little water and cook till it is completely done. Serve hot.
