Ingredients list for Phirni - SK Khazana

  • 1/3 cup Basmati rice
  • 5 cups Milk
  • A few strands of saffron
  • 1/3 cup Sugar
  • A pinch of salt
  • 1/4 teaspoon Green cardamom powder
  • 1 teaspoon Kewra water

Method

  1. Spread the soaked rice on a muslin cloth and let it air dry for 30-45 minutes.
  2. Take dried rice into a blender jar and grind to a coarse powder and transfer to a bowl. Add 1 cup of milk in the ground rice and mix.
  3. Heat remaining milk in a non-stick deep pan and let it come to a boil.
  4. Add saffron and stir well, let the mixture reduce for 5-7 minutes on low heat. Continue to stir.
  5. Add the rice-milk mixture and mix well. Cook on low heat till the rice is completely cooked, stirring constantly.
  6. Add sugar, salt and green cardamom powder. Mix and cook for 3-4 minutes or till the sugar dissolves.
  7. Switch the heat off and add kewra water, mix well.
  8. Transfer into individual earthenware, allow to cool and refrigerate till set.
  9. Serve chilled.
