How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Phirni - SK Khazana Recipe

  • Basmati rice 1/3 cup

  • Milk 5 cups

  • A few strands of saffron

  • Sugar 1/3 cup

  • A pinch of salt

  • Green cardamom powder 1/4 teaspoon

  • Kewra water 1 teaspoon

Method

Step 1

Spread the soaked rice on a muslin cloth and let it air dry for 30-45 minutes.

Step 2

Take dried rice into a blender jar and grind to a coarse powder and transfer to a bowl. Add 1 cup of milk in the ground rice and mix.

Step 3

Heat remaining milk in a non-stick deep pan and let it come to a boil.

Step 4

Add saffron and stir well, let the mixture reduce for 5-7 minutes on low heat. Continue to stir.

Step 5

Add the rice-milk mixture and mix well. Cook on low heat till the rice is completely cooked, stirring constantly.

Step 6

Add sugar, salt and green cardamom powder. Mix and cook for 3-4 minutes or till the sugar dissolves.

Step 7

Switch the heat off and add kewra water, mix well.

Step 8

Transfer into individual earthenware, allow to cool and refrigerate till set.

Step 9

Serve chilled.
