Ingredients
- 4 brown pav
- 1 fresh mozzarella cheese ball
- 2 medium tomatoes sliced
- Micro greens to garnish
Pesto sauce
- 1 cup fresh basil leaves
- 1 tablespoon pinenuts
- 3-4 cloves garlic
- 2 tablespoons parmesan cheese powder
- 2 tablespoons olive oil + for drizzling
- Crushed black peppercorns to taste
- Salt to taste
Method
- Preheat the oven to 180° C.
- To make pesto sauce, put garlic cloves, parmesan cheese powder and pine nuts in a blender jar and grind.
- Add basil leaves, olive oil, salt, and crushed black pepper and grind again into a coarse paste. Transfer the pesto into a bowl.
- Slice the brown pavs without cutting through and place them on a baking tray. Cut fresh mozzarella into round slices.
- Spread pesto paste between each slice. Insert a cheese slice and a tomato slice alternately in between the slices. Keep the tray in the preheated oven and bake for 8-10 minutes.
- Transfer them onto a serving platter, garnish with microgreens and serve immediately.
