Pesto Mozzarella Sandwich

Ingredients 

  • 4 brown pav
  • 1 fresh mozzarella cheese ball
  • 2 medium tomatoes sliced
  • Micro greens to garnish

Pesto sauce

  • 1 cup fresh basil leaves
  • 1 tablespoon pinenuts
  • 3-4 cloves garlic
  • 2 tablespoons parmesan cheese powder
  • 2 tablespoons olive oil + for drizzling 
  • Crushed black peppercorns to taste
  • Salt to taste

Method

  1. Preheat the oven to 180° C.
  2. To make pesto sauce, put garlic cloves, parmesan cheese powder and pine nuts in a blender jar and grind.
  3. Add basil leaves, olive oil, salt, and crushed black pepper and grind again into a coarse paste. Transfer the pesto into a bowl.
  4. Slice the brown pavs without cutting through and place them on a baking tray. Cut fresh mozzarella into round slices.
  5. Spread pesto paste between each slice. Insert a cheese slice and a tomato slice alternately in between the slices. Keep the tray in the preheated oven and bake for 8-10 minutes.
  6. Transfer them onto a serving platter, garnish with microgreens and serve immediately.
