Ingredients list for Pesto Fish

  • 4 King fish (surmai) cut into darnes
  • 15-20 Fresh basil leaves
  • 1/4 cup Pinenuts
  • 4-5 cloves Garlic
  • 2 tablespoons Olive oil
  • to shallow fry Oil
  • to serve Onion rings
  • to serve Fresh mint sprig

Method

  1. Pour olive oil into a blender jar, add garlic cloves, basil leaves and pine nuts and blend to a fine paste. This is pesto.
  2. Transfer the pesto into a bowl, add the fish darnes and mix well so that the fish is well coated on all sides. Set aside to marinate for 15 minutes
  3. Heat sufficient oil in a non-stick pan, place the fish darnes in it and shallow-fry, turning sides, till they are evenly and lightly browned on both sides. Drain on absorbent paper.
  4. Place them in a serving platter, garnish with mint sprig and serve warm with onion rings.
