By Sanjeev Kapoor 18 Mar 2021 in Recipes Course New Update Advertisment Main Ingredients King fish (surmai), Fresh basil leaves Cuisine Fusion Course Snacks and Starters Prep Time 16-20 minutes Cook time 6-10 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Pesto Fish 4 King fish (surmai) cut into darnes 15-20 Fresh basil leaves 1/4 cup Pinenuts 4-5 cloves Garlic 2 tablespoons Olive oil to shallow fry Oil to serve Onion rings to serve Fresh mint sprig Method Pour olive oil into a blender jar, add garlic cloves, basil leaves and pine nuts and blend to a fine paste. This is pesto. Transfer the pesto into a bowl, add the fish darnes and mix well so that the fish is well coated on all sides. Set aside to marinate for 15 minutes Heat sufficient oil in a non-stick pan, place the fish darnes in it and shallow-fry, turning sides, till they are evenly and lightly browned on both sides. Drain on absorbent paper.
