Ingredients
- 500 grams cottage cheese (paneer) cut into 2-inch squares with ½ inch thickness
- ¼ cup peri peri seasoning
- 8 mini brown burger buns
- Salt to taste
- 2 tablespoons oil
- 8 tablespoons mayonnaise
- 4 tablespoons mustard paste
- A few Iceberg lettuce leaves
- 8 onion roundels
- 8 tomato roundels
- 8 cherry tomatoes + to garnish
- French fries to serve
Method
- Put peri peri seasoning in a plate, add salt and mix well. Roll the 8 cottage cheese cubes in this mixture.
- Heat oil in a non-stick grill pan, place the marinated cottage cheese cubes in it and grill till evenly done on all sides. Transfer them onto a plate.
- Halve all the burger buns. Apply 1 tbsp mayonnaise and ½ tbsp mustard paste on the base half of all the buns and top with the grilled cottage cheese cube.
- Top each cottage cheese cube with some lettuce leaves, an onion roundel and a tomato slice and cover with the bun top halves. Secure each burger with a cherry tomato skewered on a toothpick.
- Arrange the burgers on a serving platter and serve immediately with French fries.
