Ingredients list for Penne With Three Capsicums And Mozzarella
- 250 grams Penne pasta
- Green capsicum
- 1 medium Red capsicum
- 2 medium Green capsicum
- 1 medium Yellow capsicum
- 1/2 cup Mozzarella cheese grated
- 2 tablespoons Olive oil
- 1 medium Onion sliced
- 3 cloves Garlic chopped
- 1/2 teaspoon Dried oregano
- 1/2 teaspoon Dried basil
- 5-6 Black peppercorns crushed
- 2 tablespoons Parmesan cheese grated
Method
- Cook penne in seven to eight cups of boiling salted water to which a teaspoon of oil has been added till al dente (cooked, but still firm to the bite).
- Drain, refresh in cold water and set aside to cool. Roast the whole capsicums over an open flame. Refresh in cold water, peel, halve, remove seeds and cut into thin strips.
- Heat oil in a pan; add the onion, garlic, dried oregano, dried basil, crushed peppercorns and salt and sauté over high heat for two to three minutes, stirring occasionally. Add the cooked penne, the capsicums and mozzarella cheese, toss lightly, cover and
