Ingredients list for Pear Tarte Tatin

  • 4-5 Pears peeled and cut into quarters
  • 1/3 cup Butter
  • 1/2 cup Brown sugar
  • 3 tablespoons Fresh cream
  • 1/4 cup Walnuts toasted
  • for dusting Icing sugar
  • For Short crust pastry
  • for dusting Refined flour 2 cups +
  • 1 cup Butter chilled
  • 1/2 cup Sugar
  • 1 Egg

Method

  1. Preheat oven at 200ºC.
  2. Heat butter in a non-stick pan. Add brown sugar and cream, mix well and let the sugar melt. Add pears, mix and cook till the pears turn soft.
  3. To make short crust pastry, combine refined flour and butter in a bowl. Mix well till the mixture resembles breadcrumbs.
  4. Add sugar and mix well.
  5. Separate egg yolk from white and add the yolk to the flour mixture and mix well. Add ¼ cup chilled water and knead into a smooth dough. Refrigerate the dough for half an hour.
  6. Divide the short crust pastry into large portions.
  7. Place a large sheet of greaseproof sheet on the worktop. Dust with refined flour, place a portion of short crust pastry on it and place one more sheet on top. Roll out into a large disc. Make remaining discs similarly.
  8. Place cooked pears into a baking dish. Top with walnuts and cover with the rolled out short crust pastry disc. Press the edges and prick the top with knife.
  9. Put the baking dish in the preheated oven and bake for 25 minutes.
  10. Invert the baking dish onto a plate and demould. Dust with icing sugar and serve immediately.
