Add brown sugar and cream, mix well and let the sugar melt. Add pears, mix and cook till the pears turn soft. To make short crust pastry, combine refined flour and butter in a bowl. Mix well with fingertips till the mixture resembles breadcrumbs. Add sugar and mix well. Separate egg yolk from white and add the yolk to the flour mixture. Add ¼ cup chilled water and knead into a smooth dough. Refrigerate the dough for ½ hour. Preheat oven at 200ºC. Divide the short crust pastry into large portions. Place a large sheet of greaseproof sheet on the worktop. Dust with refined flour, place a portion of short crust pastry on it and place one more greaseproof sheet on top. Roll out into a large disc. Make remaining discs similarly. Put cooked pears into a baking dish. Top with walnuts and cover with the rolled out short crust pastry disc. Press the edges and prick the top with a knife. Put the baking dish in the preheated oven and bake for 25 minutes.
