Paunk Ka Salad

Ingredients 

  • 1 1/2 cups fresh green jowar (paunk)
  • 12-15 green garlic stalks
  • 1/4 bunch fresh coriander leaves, chopped
  • 2 green chillies
  • 1 tablespoons chopped raw mango
  • Salt to taste
  • 1 teaspoon lemon juice
  • 1 large onion, chopped
  • 1 large tomato, seeded and chopped
  • 1/2 cup pepper sev

Method

  1. Heat a non stick pan on low heat, add the paunk and let it heat for three to four minutes. Meanwhile grind together green garlic, coriander leaves, green chillies, half the raw mango to a coarse chutney. Transfer the chutney into a bowl.
  2. Add salt and lemon juice and mix. Transfer the paunk into a mixing bowl. Add onion, tomato and salt and mix. Add one tablespoon of green garlic chutney and mix well. Grate the remaining raw mango and sprinkle on top. Sprinkle lemon and pepper sev and serve immediately with the green chutney in a separate bowl.
