Ingredients list for Paneer Orange Cake
- 1 cup Cottage Cheese grated
- 1 tablespoon Orange Rind grated
- ¼ cup Orange juice
- 2 tablespoon Orange marmalade
- 3 Eggs
- 1 cup Castor sugar (caster sugar)
- 1 teaspoon Vanilla essence
- Juice of ½ lemon
- 1½ cups + Refined flour (maida)
- 1 teaspoon Baking powder
- for greasing Oil
- for dusting Icing sugar
Method
- Preheat oven to 180º C.
- Break eggs in a bowl, add sugar and beat with an electric beater till fluffy. Add orange rind, vanilla essence, cottage cheese, lemon juice and orange juice and continue to beat for 2-3 minutes.
- Sift together refined flour and baking powder into the bowl and mix well.
- Grease a cake tin with oil and dust with dry flour. Pour the cottage cheese-orange mixture into it and tap lightly.
- Place the tin in the preheated oven and bake for 25-30 minutes.
- Remove the cake tin from oven, cool down to room temperature. Remove the cake from the tin and place on a plate. Spread orange marmalade evenly over it, dust icing sugar on top, cut into wedges and serve immediately.
