Ingredients
- 8 medium tomatoes, quartered
- Sea salt to taste
- 2 tablespoons olive oil
- 4-5 garlic cloves
- 1 inch ginger, roughly chopped
- ½ cup chopped fresh coriander leaves
- 1 teaspoon tamarind pulp
Method
- Preheat the oven at 200° C. Combine the tomatoes, sea salt, olive oil, garlic and ginger in a baking dish.
- Place the dish in the preheated oven and roast for twenty to twenty-five minutes or till dry.
- Remove from oven and cool down to room temperature.Blend the roasted tomato mixture with coriander leaves and tamarind pulp till smooth.
- Serve as an accompaniment with your choice of bread.
