Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Olive and Pepper Foccacia - SK Khazana Recipe

  • Black olives sliced 6-8

  • Red capsicum thickly sliced 1/2 medium

  • Yellow capsicum thickly sliced 1/2 medium

  • Crushed black peppercorns to taste

  • Fresh yeast 1 1/2 tablespoons

  • Castor sugar (caster sugar) 1 teaspoon

  • Refined flour (maida) 2 1/2 cups

  • Salt 1 1/2 teaspoons

  • Semolina (suji) 1/2

  • Olive oil 6 tablespoons + to grease + to brush

  • Fresh rosemary few springs

  • Sea salt 1 teaspoon

Method

Step 1

Take yeast in a small bowl, add castor sugar and 2 tbsps warm water and mix well. Set aside to activate the yeast.

Step 2

Sieve flour into a large bowl, add salt and semolina and mix well. Make a well in the center and add the yeast mixture and sufficient water, mix and knead into a soft dough.

Step 3

Drizzle 3 tbsps oil and knead till the oil is well incorporated.

Step 4

Dip a few rosemary sprig in oil and grease a baking pan, keep the dough in it and press lightly to spread it evenly to cover the entire base. . Cover with a moist muslin cloth and set aside to prove for 20-25 minutes.

Step 5

Preheat the oven at 180˚C.

Step 6

Make holes on the surface of the dough with your finger and drizzle remaining oil into the holes. Sprinkle red capsicum, yellow capsicum, olive slices and crushed black peppercorns all over the top. Separate the leaves of a rosemary sprig and sprinkle on top. Sprinkle sea salt on top and press gently.

Step 7

Keep the baking pan in the preheated oven and bake for 15-20 minutes.

Step 8

Remove from the oven and brush with olive oil. Serve as required.
