The cuisine of The United States is a rich amalgamation of peoples, religions and cultures thanks to the immigrants from different parts of the world.  They brought with them their local ingredients as well as cooking styles with them.  Yet amidst all these varieties Chinese and Italian cuisines dominate.  
During the 18th and 19th centuries, the Americans developed a number of new foods.  What characterised the American cuisine is the adaptation of a fusion of multiple ethnic cooking styles. During this period food production and presentation became more industrialised.

Ingredients for Nougat Icecream Recipe

  • Milk

  • Sugar 500 millilitres

  • Cornflour/ corn starch 2 tablespoons

  • Cream 125 grams

  • Sugar 150 grams

  • Ice cream essence 3 drops

  • CMC 5 grams

  • GMS (stabilizer) 5 grams


  • Almonds 1/2 cup

  • Sugar 1 cup


Step 1

Dissolve cornflour in a little cold milk.

Step 2

Heat the remaining milk in a pan. Meanwhile in another pan heat sugar with a few drops of water and caramelize. Add fresh cream to the boiling milk and mix. Add sugar and continue to boil. Add the dissolved cornflour and stir continuously to avoid lumps.

Step 3

Boil for ten more minutes. Strain through a muslin cloth. Add chopped almonds to the caramelized sugar and mix.

Step 4

Transfer the mixture onto a greased tray and spread evenly. When cooled remove the nougat and crush. Add icecream essence to the icecream mix and mix well.

Step 5

Dissolve GMS and CMC in a little water and add to the mixture and mix well. Strain again if there are any lumps remaining.

Step 6

Pour the mixture into an ice-cream tin. Add some crushed nougat, mix, cover with the lid and put in the deep freezer to set.

Step 7

Take out after an hour or two. Open the lid. sprinkle some more nougat on top. Again keep it in the deep freezer to set.

Step 8

Demould, slice and serve when firmly set.
