Ingredients list for New York Cheesecake
- 8-10 Digestive biscuits coarsely crushed
- 1 tablespoon Castor sugar (caster sugar)
- 85 grams Melted butter
- Filling
- 300 grams Cream cheese
- 250 grams Castor sugar (caster sugar)
- 3 tablespoons Refined flour (maida)
- a pinch Salt
- 1½ teaspoons Lemon juice
- 1½ teaspoons Vanilla essence
- Zest of 1 lemon
- 3 Eggs
- 1 Egg yolk
- 1½ cups Sour cream
Method
- Preheat oven to 180º C.
- Take crushed biscuits in a bowl. Add castor sugar and butter, mix well.
- Line a loose bottom tin with this mixture, place the tin in the preheated oven and bake for 10 minutes to make the base.
- To make filling, beat cream cheese in a bowl with an electric beater till creamy. Add castor sugar, flour and salt and beat again.
- Add lemon juice, vanilla essence and lemon zest and beat.
- Add eggs and egg yolk and beat again. Add sour cream and mix till well combined.
- Pour this mixture over the baked base and tap lightly. Place the tin in the preheated oven and bake for 20-25 minutes.
- Cool down to room temperature, demould, cut into wedges and serve.
