Ingredients
- 1 cup mixed sprouts
- 1/2 teaspoons mustard seeds
- 6-8 curry leaves
- 2 medium onions, finely chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1 teaspoon goda masala
- 1 teaspoon grated jaggery (gur)
- Salt to taste
- 2 tablespoons finely chopped fresh coriander leaves
- 2 tablespoons scraped fresh coconut
For paste
- 6-7 garlic cloves
- 3-4 green chillies, roughly chopped
- 1 teaspoon roasted cumin seeds
- 1/4 cup scraped fresh coconut
Method
- Grind garlic, green chillies, cumin seeds and scraped coconut to a smooth paste. Heat a non-stick pan, add mustard seeds and allow them to crackle. Add curry leaves and onions. Roast, stirring continuously till onions turn light golden.
- Add ground paste and cook on medium heat for three to four minutes. Add turmeric powder, red chilli powder, goda masala, jaggery and salt. Stir well. Add mixed sprouts, mix well and add enough water to just cover the mixture.
- Bring it to a boil and continue cooking on medium heat, stirring occasionally till the sprouts are cooked. Serve hot garnished with coriander leaves and coconut.
