Ingredients list for Masaledar Gobhi
- 400 grams Cauiliflower
- 2 medium Fresh Coriander
- 10 cloves Garlic
- 1 1/2 inch piece Ginger
- 2 Green chillies
- 1/2 medium bunch Fresh coriander leaves
- 4 Whole dry red chilli
- 6 Cloves
- 3 Green cardamoms
- 1 teaspoon Turmeric powder
- 1/2 teaspoon Cumin powder
- 3/4 cup Yogurt
- to taste Salt
- 1 tablespoon Oil
- 1 teaspoon Mustard seeds
Method
- Separate cauliflower into smaller florets. Wash and drain them. Peel, wash and chop onions, garlic and ginger. Remove stems, wash and chop green chillies. Clean, wash and chop coriander leaves.
- Remove stems of red chillies. Grind onions, garlic, ginger, red chillies, cloves, green cardamoms, turmeric powder, cumin powder to a fine paste. Mix the ground masala with yogurt.
- Add salt and marinate the cauliflower florets in this for half an hour. Heat oil in a kadai, add mustard seeds and when they crackle add green chillies and sauté for half a minute.
- Add marinated cauliflower and cook for five minutes on high heat, stirring constantly. Add one and a half cups of water and bring it to a boil.
- Lower heat and cook covered till the cauliflower is cooked. Serve hot garnished with chopped coriander leaves.
