Ingredients
- 1 ripe mangoes, peeled, deseeded and cut into cubes
- 2 tablespoons crumbled feta cheese
- 5-6 romaine lettuce leaves
- ½ cup pico de gallo
- 1 tablespoon sliced green olives
- 1 tablespoon sliced black olives
- 1 tablespoon Jalapeno sliced
Jalapeno-coriander dressing
- ½ cup chopped coriander leaves
- Salt to taste
- 1 teaspoon lemon juice
- 3-4 tablespoons oil
- 3 fresh jalapenos
Method
- Slice jalapenos and blend with lemon juice, salt and oil till smooth.
- Tear romaine lettuce and add to the bowl, add Pico de Gallo, green and black olives, jalapenos, mangoes and dressing reserving some. Mix well.
- Garnish with feta cheese, drizzle reserved dressing and serve immediately.
