Ingredients for Lemon Tea Cake Recipe

  • Lemon 1

  • Castor sugar 1/8 cup

  • Oil 1/4 cup

  • Self raising flour 1 1/4 cups

  • Baking powder 1 teaspoon


Step 1

Preheat the oven to 180˚C.

Step 2

Put castor sugar and oil in a planetary mixer bowl and process. Add ¾ cup water and process till well combined.

Step 3

Sieve flour and baking powder into the mixer bowl. Grate the zest of 1 lemon into the bowl. Add juice of the lemon and continue to process to a smooth batter. Make sure not to over process.

Step 4

Pour the batter rectangular silicone moulds and tap them to release any air bubbles. Keep the moulds on a baking tray, keep the tray in the preheated oven and bake for 25-30 minutes. Take them out of the oven and set aside to cool down to room temperature.

Step 5

Demould, slice, arrange on serving plates and serve.
