Put castor sugar and oil in a planetary mixer bowl and process. Add ¾ cup water and process till well combined. Sieve flour and baking powder into the mixer bowl. Grate the zest of 1 lemon into the bowl. Add juice of the lemon and continue to process to a smooth batter. Make sure not to over process. Pour the batter rectangular silicone moulds and tap them to release any air bubbles. Keep the moulds on a baking tray, keep the tray in the preheated oven and bake for 25-30 minutes. Take them out of the oven and set aside to cool down to room temperature.
