Ingredients list for Lemon Tea Cake
- 1 Lemon
- 1/8 cup Castor sugar
- 1/4 cup Oil
- 1 1/4 cups Self raising flour
- 1 teaspoon Baking powder
Method
- Preheat the oven to 180˚C.
- Put castor sugar and oil in a planetary mixer bowl and process. Add ¾ cup water and process till well combined.
- Sieve flour and baking powder into the mixer bowl. Grate the zest of 1 lemon into the bowl. Add juice of the lemon and continue to process to a smooth batter. Make sure not to over process.
- Pour the batter rectangular silicone moulds and tap them to release any air bubbles. Keep the moulds on a baking tray, keep the tray in the preheated oven and bake for 25-30 minutes. Take them out of the oven and set aside to cool down to room temperature.
- Demould, slice, arrange on serving plates and serve.
