Ingredients
- ½ cup refined flour (maida)
- ½ teaspoon lemon juice
- 1 tablespoon lemon zest
- 1 egg
- 1 egg yolk
- ⅓ cup castor sugar
- ½ cup icing sugar
- 3 tablespoons cornflour
- Icing sugar for dusting
Filling - ½ cup butter
- ½ cup cream cheese
- ¼ cup powdered sugar
- 1 tablespoon lemon zest
- ½ tablespoon lemon juice
Method
- Preheat oven to 180˚ C. Line a baking tray with parchment paper.
- Beat together egg and egg yolk in a bowl till light. Add castor sugar and beat.
- Add lemon juice, lemon zest and icing sugar and beat well. Add flour and cornflour and fold till well combined.
- Fill the mixture in a piping bag fitted with a nozzle and pipe out small portions on the lined tray.
- Put the tray in the preheated oven and bake for 10-15 minutes. Remove from heat and cool to room temperature.
- To make the filling, put butter in a bowl. Add powdered sugar, lemon zest, lemon juice and cream cheese and whisk well. Transfer in a piping bag.
- Pipe the filling on one cookie and cover with another cookie to make the sandwiches. Dust with icing sugar and serve.
