Ingredients for Lemon Curd Ice Cream Recipe

  • Lemon juice 1/2 cup

  • Castor sugar 3/4 cup

  • Lemon 1

  • Egg yolks 5

  • Butter 1 1/4 cups

  • Vanilla ice cream 3 cups

  • Fresh mint sprigs to garnish

Method

Step 1

Heat a non-stick pan, add sugar and lemon juice and mix well. Grate the zest of 1 lemon into the pan and mix well.

Step 2

Pour this mixture into a bowl of egg yolks and whisk well.

Step 3

Pour the mixture back into the pan, cook on low heat. Add butter and whisk again and cook till the mixture thickens. Transfer into a bowl and let it cool.

Step 4

Take vanilla ice cream in a large bowl add ¾ of the lemon curd and mix gently.

Step 5

Transfer the mixture in an air tight container and top with the some lemon curd and freeze till set.

Step 6

Scoop out the ice cream into a serving bowl, drizzle remaining lemon curd on top, garnish with a mint sprig and serve immediately.
