Ingredients list for Lemon Curd Ice Cream
- 1/2 cup Lemon juice
- 3/4 cup Castor sugar
- 1 Lemon
- 5 Egg yolks
- 1 1/4 cups Butter
- 3 cups Vanilla ice cream
- to garnish Fresh mint sprigs
Method
- Heat a non-stick pan, add sugar and lemon juice and mix well. Grate the zest of 1 lemon into the pan and mix well.
- Pour this mixture into a bowl of egg yolks and whisk well.
- Pour the mixture back into the pan, cook on low heat. Add butter and whisk again and cook till the mixture thickens. Transfer into a bowl and let it cool.
- Take vanilla ice cream in a large bowl add ¾ of the lemon curd and mix gently.
- Transfer the mixture in an air tight container and top with the some lemon curd and freeze till set.
- Scoop out the ice cream into a serving bowl, drizzle remaining lemon curd on top, garnish with a mint sprig and serve immediately.
