Ingredients
- 40 button mushrooms, quartered
- 10 babycorns, diagonally sliced
- 5 stalks spring onion greens, chopped
- 1/2 teaspoon cumin seeds
- 4-5 cloves
- 2 medium onions, chopped
- 1 tablespoon ginger-garlic paste
- 1/4 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chilli powder
- 1/4 cup tomato puree
- Salt to taste
- A few sprigs of fresh coriander
- 1/2 teaspoon garam masala powder
Method
- Heat a non stick pan, add cumin seeds and cloves and roast till fragrant. Add onions and roast on medium heat, stirring continuously till golden.
- Add ¼ cup water, ginger-garlic paste and mix well. Add turmeric powder, coriander powder, red chilli powder, tomato puree and mix well.
- Add babycorns and mushrooms and mix. Add 1 cup water and mix. Add salt, cover and cook for 2-3 minutes.
- Chop spring onion greens and add to the pan and mix. Chop coriander leaves and add and mix. Add garam masala powder and mix. Cover and cook for 5-7 minutes.
- Transfer into a serving bowl and serve hot.
