Ingredients
- 1 cup chicken mince
- 12 eggs
- Salt to taste
- 1 teaspoon oil + for cooking
- 1 teaspoon Schezwan sauce
- 4 teaspoons tomato puree
- 11/2 tablespoons sweet red chilli sauce
Method
- For each omelette, break 3 eggs into a bowl, add salt and beat well.
- Heat 4 teaspoons oil in a non-stick pan. Add 2 cups chicken mince and saute well.
- Add schezwan chutney and tomato puree, mix well and cook for 2 minutes.
- Add sweet red chilli sauce and mix well. Cook till the chicken is fully done.
- Heat some oil in another non-stick pan. Pour beaten eggs and scramble a little and cook.
- Place ¼ portion of cooked chicken mixture on one side of omelette and fold. Flip and cook for a minute. Prepare remaining omelettes similarly.
- Serve hot.
