Ingredients list for Jowar with Jaggery
- 1 cup Sorghum (jowar) soaked overnight and cooked
- 1 cup Jaggery (gur) grated
- 4 tablespoons Pure ghee
- 1/2 cup Scraped coconut
- 1/2 teaspoon Green cardamom powder
- 1/2 cup Cashewnuts halved
- 1/2 cup Thick coconut milk
Method
- Heat ghee in a deep non stick pan. Put ¼ cup scraped coconut in a blender jar. Add 2 tbsps water and blend with a hand blender.
- Add sorghum to the pan and saute stirring at regular intervals. Add ground coconut and jaggery and stir till jaggery melts.
- Add green cardamom powder and cashewnuts and mix. Add coconut milk and mix. Let the mixture simmer. Roast the remaining scraped coconut in a non stick pan till fragrant.
- Garnish the sweet sorghum with roasted coconut and serve hot.
