Italian Roasted Potatoes

Ingredients 

  • 6-7 medium potatoes, peeled and halved
  • Salt to taste
  • 2 tablespoons olive oil
  • Crushed black peppercorns to taste 
  • 3-4 sprigs of fresh rosemary
  • 2-3 sprigs of fresh thyme
  • 7-8 garlic cloves, peeled
  • 2 teaspoons butter
  • Chopped fresh parsley to garnish 

Method

  1. Preheat the oven 180º C.
  2. Heat sufficient water in a non-stick heavy bottom pan, add 1 tbsp salt and potatoes. Cook till potatoes are half done.
  3. Grease a baking tray with olive oil. Place the potatoes on the baking tray and mash them lightly with a masher.
  4. Sprinkle salt and crushed black peppercorns. Add hand torn fresh rosemary, fresh thyme, garlic cloves and butter. Bake for 20-25 minutes.
  5. Transfer into a serving bowl, sprinkle parsley and serve hot.
