Ingredients
- 6-7 medium potatoes, peeled and halved
- Salt to taste
- 2 tablespoons olive oil
- Crushed black peppercorns to taste
- 3-4 sprigs of fresh rosemary
- 2-3 sprigs of fresh thyme
- 7-8 garlic cloves, peeled
- 2 teaspoons butter
- Chopped fresh parsley to garnish
Method
- Preheat the oven 180º C.
- Heat sufficient water in a non-stick heavy bottom pan, add 1 tbsp salt and potatoes. Cook till potatoes are half done.
- Grease a baking tray with olive oil. Place the potatoes on the baking tray and mash them lightly with a masher.
- Sprinkle salt and crushed black peppercorns. Add hand torn fresh rosemary, fresh thyme, garlic cloves and butter. Bake for 20-25 minutes.
- Transfer into a serving bowl, sprinkle parsley and serve hot.
