Ingredients for Italian Roasted Potatoes - SK Khazana Recipe

  • Medium potatoes peeled and halved 6-7

  • Salt to taste

  • Olive oil 2 tablespoons

  • Black peppercorns crushed to taste

  • Fresh rosemary 3-4 sprigs

  • Fresh thyme 2-3 sprigs

  • Garlic cloves peeled 7-8

  • Butter 2 teaspoons

  • Fresh parsley chopped to garnish

Method

Step 1

Preheat the oven 180º C.

Step 2

Heat sufficient water in a non-stick heavy bottom pan, add 1 tbsp salt and potatoes. Cook till potatoes are half done.

Step 3

Grease a baking tray with olive oil. Place the potatoes on the baking tray and mash them lightly with a masher.

Step 4

Sprinkle salt and crushed black peppercorns. Add hand torn fresh rosemary, fresh thyme, garlic cloves and butter. Bake for 20-25 minutes.

Step 5

Transfer into a serving bowl, sprinkle parsley and serve hot.
