Ingredients
- 4 medium red apples peeled and cored
- 10-12 cashew nuts roasted
- ¼ cup roasted almonds
- ¼ cup walnuts roasted
- 8 whole wheat bread slices
- 2 teaspoons butter + as required
- 1 cup orange juice
- 1 cup paneer (cottage cheese), grated
- Maple syrup to serve
Method
- Thickly slice apples and set aside
- Heat butter in a non-stick pan, place the apple slices and cook for 1-2 minutes on both sides. Add orange juice and cook for 2-3 minutes or till the moisture dries up.
- Put cashew nuts, almonds and walnuts in a mortar and pestle and pound to a coarse powder.
- Take cottage cheese in a bowl, add the nuts mixture and mix well. Set aside.
- Apply butter on one side of each bread slice and spread the apple mixture evenly on four slices of bread. Spread a portion of the nut-cottage cheese mixture over the apple. Cover with remaining slices of bread.
- Heat a little butter on a grill pan place the sandwiches and grill for 1-2 minutes, flip and apply a little butter. Grill further for 1-2 minutes.
- Transfer the sandwiches to a serving plate and serve warm with maple syrup.
