Ingredients 

  • 4 medium red apples peeled and cored
  • 10-12 cashew nuts roasted
  • ¼ cup roasted almonds
  • ¼ cup walnuts roasted
  • 8 whole wheat bread slices
  • 2 teaspoons butter + as required
  • 1 cup orange juice
  • 1 cup paneer (cottage cheese), grated
  • Maple syrup to serve

Method

  1. Thickly slice apples and set aside
  2. Heat butter in a non-stick pan, place the apple slices and cook for 1-2 minutes on both sides. Add orange juice and cook for 2-3 minutes or till the moisture dries up.
  3. Put cashew nuts, almonds and walnuts in a mortar and pestle and pound to a coarse powder.
  4. Take cottage cheese in a bowl, add the nuts mixture and mix well. Set aside.
  5. Apply butter on one side of each bread slice and spread the apple mixture evenly on four slices of bread. Spread a portion of the nut-cottage cheese mixture over the apple. Cover with remaining slices of bread.
  6. Heat a little butter on a grill pan place the sandwiches and grill for 1-2 minutes, flip and apply a little butter. Grill further for 1-2 minutes.
  7. Transfer the sandwiches to a serving plate and serve warm with maple syrup.
