Ingredients list for Healthy Cookies

  • 1 cup Muesli
  • 1 cup Oats
  • 2 Eggs
  • ½ cup pumpkin puree
  • 2 tablespoons Coconut oil
  • ¼ cup Honey
  • 2 tablespoons Pumpkin seeds roasted
  • 2 tablespoons Cranberries dried
  • 2 tablespoons Flax seeds toasted and crushed
  • a pinch Cinnamon powder
  • 2 tablespoons Whole wheat flour (atta)
  • a pinch Salt

Method

  1. Break eggs into a bowl. Add pumpkin puree and mix. Add coconut oil and whisk. Add honey and whisk well.
  2. Add muesli, pumpkin seeds, dried cranberries, flaxseeds, cinnamon powder and oats and mix.
  3. Add wheat flour and mix. Add salt and mix well. Refrigerate for 1-2 hours.
  4. Preheat oven to 180º C.
  5. Divide the oats mixture into equal portions, shape into balls and flatten lightly. Place them on a baking tray.
  6. Place the tray in the preheated oven and bake for 15-18 minutes. Remove from oven and cool.
  7. Serve or store in an air-tight jar.
