Ingredients for Green Moong Tepenade Recipe

  • Boiled Green Moong (soaked and boiled with salt) 2 cups

  • Olives chopped 1/2 cup

  • Black olives chopped 1/2 cup

  • Extra virgin olive oil 5 tablespoons

  • Salt to taste

  • Lemon zest grated 1 teaspoon

  • French bread (baguette) 1

  • Curly parsley 2-3 sprigs

  • Crushed red chillies 1/2 teaspoon

  • Lemon juice 1 teaspoon

Method

Step 1

Heat 2 tbsps extra virgin olive oil in a non stick pan. Add green and black olives along with boiled green gram and mix. Mash them lightly. Add salt and lemon zest and mix well.

Step 2

Cut diagonal slices of French bread. Transfer the mixture into a bowl. Chop curly parsley and add to the mixture. Add crushed red chillies, lemon juice and remaining extra virgin olive oil and mix well.

Step 3

Arrange bread slices on a serving platter. Make quennels of the tapenade and keep over each slice. Drizzle extra virgin olive oil over them and serve.
