Ingredients list for Green Moong Tepenade

  • 2 cups Boiled Green Moong (soaked and boiled with salt)
  • 1/2 cup Olives chopped
  • 1/2 cup Black olives chopped
  • 5 tablespoons Extra virgin olive oil
  • to taste Salt
  • 1 teaspoon Lemon zest grated
  • 1 French bread (baguette)
  • 2-3 sprigs Curly parsley
  • 1/2 teaspoon Crushed red chillies
  • 1 teaspoon Lemon juice

Method

  1. Heat 2 tbsps extra virgin olive oil in a non stick pan. Add green and black olives along with boiled green gram and mix. Mash them lightly. Add salt and lemon zest and mix well.
  2. Cut diagonal slices of French bread. Transfer the mixture into a bowl. Chop curly parsley and add to the mixture. Add crushed red chillies, lemon juice and remaining extra virgin olive oil and mix well.
  3. Arrange bread slices on a serving platter. Make quennels of the tapenade and keep over each slice. Drizzle extra virgin olive oil over them and serve.
