Ingredients list for Green Moong Tepenade
- 2 cups Boiled Green Moong (soaked and boiled with salt)
- 1/2 cup Olives chopped
- 1/2 cup Black olives chopped
- 5 tablespoons Extra virgin olive oil
- to taste Salt
- 1 teaspoon Lemon zest grated
- 1 French bread (baguette)
- 2-3 sprigs Curly parsley
- 1/2 teaspoon Crushed red chillies
- 1 teaspoon Lemon juice
Method
- Heat 2 tbsps extra virgin olive oil in a non stick pan. Add green and black olives along with boiled green gram and mix. Mash them lightly. Add salt and lemon zest and mix well.
- Cut diagonal slices of French bread. Transfer the mixture into a bowl. Chop curly parsley and add to the mixture. Add crushed red chillies, lemon juice and remaining extra virgin olive oil and mix well.
- Arrange bread slices on a serving platter. Make quennels of the tapenade and keep over each slice. Drizzle extra virgin olive oil over them and serve.
