Ingredients list for Greek Style Yogurt Chicken
- 4 Boneless Chicken breast
- 1/2 cup Skimmed Milk yogurt
- 2 tablespoons Lemon juice
- 8-10 cloves Garlic,ground
- 1 1/2 tablespoons Olive oil
- 1/2 teaspoon Paprika powder
- 1/2 teaspoon Black peppercorns,crushed
- to taste Salt
- 1 tablespoon Fresh parsley,chopped
- 2 tablespoons Fresh coriander leaves,chopped
- 10-12 Fresh mint leaves,chopped
- 1 teaspoon Oil
- 6-8 Black olives
Method
- Make three slits on each chicken breast. Hang the skimmed milk yogurt in a muslin cloth for about ten to fifteen minutes to drain away the excess liquid.
- Whisk the thick yogurt and set aside. Mix lemon juice with yogurt, garlic paste, olive oil, paprika powder, crushed peppercorns, salt, half the parsley, coriander and mint leaves. Marinate the chicken breasts in this mixture and refrigerate for an hour. Heat a non-stick shallow pan and brush it with the oil.
- Add the chicken breasts and sear them on high heat for one minute on either side. Reduce heat, cover and cook turning the pieces occasionally for uniform cooking and browning, for eight to ten minutes or until completely cooked. Add the black olives, stir and transfer into a serving dish.
- Garnish with the remaining parsley, coriander and mint leaves and serve hot.
