  • 250 grams Carrots
  • 1 cup Pineapple
  • 1/3 cup Orange juice
  • 1/3 cup Sugar
  • 1/2 teaspoon Coffee powder
  • 1 Egg
  • 1 1/2 cups All purpose flour
  • teaspoon Soda bicarbonate
  • 1 teaspoon Cinnamon powder
  • 1/4 teaspoon Salt
  • 3 tablespoons Oil
  • Topping
  • 1/3 cup Sugar
  • 1/3 cup Walnuts,finely chopped
  • 3/4 teaspoon Cinnamon powder


  1. Preheat oven to 180˚C. Grease a cake tin with oil. In a medium sized bowl mix together grated carrot, chopped pineapple.
  2. Add orange juice and mix. Add sugar, coffee powder and mix. Break the egg into it and mix. Sieve flour and baking soda into the egg mixture. Mix with a light hand. Add cinnamon powder, a pinch of salt and mix. Add oil and mix. Pour the batter into the greased cake tin. In another bowl mix together chopped walnuts, sugar and cinnamon powder.
  3. Sprinkle this over the cake batter. Bake in the preheated oven at 180°C for twenty to twenty five minutes. Cool slightly. Slice and serve.
