Ingredients list for Golden Pineapple Carrot Coffee Cake
- 250 grams Carrots
- 1 cup Pineapple
- 1/3 cup Orange juice
- 1/3 cup Sugar
- 1/2 teaspoon Coffee powder
- 1 Egg
- 1 1/2 cups All purpose flour
- teaspoon Soda bicarbonate
- 1 teaspoon Cinnamon powder
- 1/4 teaspoon Salt
- 3 tablespoons Oil
- Topping
- 1/3 cup Sugar
- 1/3 cup Walnuts,finely chopped
- 3/4 teaspoon Cinnamon powder
Method
- Preheat oven to 180˚C. Grease a cake tin with oil. In a medium sized bowl mix together grated carrot, chopped pineapple.
- Add orange juice and mix. Add sugar, coffee powder and mix. Break the egg into it and mix. Sieve flour and baking soda into the egg mixture. Mix with a light hand. Add cinnamon powder, a pinch of salt and mix. Add oil and mix. Pour the batter into the greased cake tin. In another bowl mix together chopped walnuts, sugar and cinnamon powder.
- Sprinkle this over the cake batter. Bake in the preheated oven at 180°C for twenty to twenty five minutes. Cool slightly. Slice and serve.
