Gobhi Mushroom Chilli Fry

Ingredients

  • 1 medium cauliflower, separated into medium florets
  • 10-12 medium fresh button mushrooms, quartered
  • 8-10 green chillies, chopped
  • 2 spring onions with greens
  • 3 tablespoons cornflour
  • 2 tablespoons soy sauce
  • Salt to taste
  • 1 tablespoon oil + for deep-frying
  • 10 garlic cloves, finely chopped
  • 1 teaspoon white pepper powder                           

Method   

  1. Chop the spring onions finely. Chop the greens and keep separately. 
  2. Mix together the cornflour, half the soy sauce, salt and green chillies and prepare a thick batter using water as required.
  3. Heat plenty of oil in a kadai. Dip the cauliflower florets in this batter and deep-fry till golden brown.  Drain on absorbent paper and set aside.  Reserve the batter aside.
  4. Heat one tablespoon of oil in a pan and sauté the spring onions.  Add the garlic and continue to sauté on high heat till translucent.  Add the mushrooms and cook, taking care that mushrooms are not overcooked as they shrink.
  5. Add the remaining soy sauce, fried cauliflower, salt, white pepper powder and add little water.
  6. Add the remaining batter, cook till thick.
  7. Serve hot garnished with the spring onion greens.
