Ingredients list for Gluten Free Almond Cake
- 1 cup Almond flour
- 3/4 cup Castor sugar
- 3 Eggs
- 1 teaspoon Vanilla essence
- 1/2 cup Peanut butter
- 2 tablespoons Cornflour
- 1 teaspoon Baking powder
- 1/2 cup Walnuts chopped
- to sprinkle Icing sugar
Method
- Preheat the oven to 180˚C. Grease a baking tin with butter and dust with cornflour.
- Take castor sugar in a mixing bowl, break the eggs one by one at a time and add and beat with an electric beater till well combined.
- Add vanilla essence and peanut butter and mix well.
- Sieve together almond flour, cornflour and baking powder directly into the bowl and add walnuts and fold in gently till well combined.
- Pour the batter into the greased tin and spread it evenly. Tap to release any air pockets. Keep the baking tin in the preheated oven and bake for 40-45 minutes.
- Take the tin out of the oven and keep it on a wire rack and allow it to cool. Cut into squares.
- Keep the cake squares on a serving platter, dust with icing sugar and serve.
