Garlic Grilled Tomatoes

Halved tomatoes marinated with garlic and olive oil and grilled. Serve this recipe as an accompaniments or as it is. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 6-4 garlic cloves, chopped
  • 4 medium tomatoes
  • 3 tablespoons olive oil
  • Salt to taste
  • 1/2 teaspoon crushed black peppercorns
  • 4-5 basil leaves + for garnish

Method

  1. Discard the eye of the tomatoes and cut the base to flatten it. Cut into two parts.
  2. Combine 1 tablespoon olive oil, garlic, salt and crushed peppercorns in a bowl. Roughly tear basil leaves and add. Mix well and add 1 tablespoon olive oil and mix again.
  3. Add tomatoes and mix well. Set aside for 10-15 minutes.
  4. Heat remaining oil in a non-stick grill pan. Add the marinated tomatoes and grill till evenly done from both the sides.
  5. Garnish with finely shredded basil leaves and serve immediately.
