Ingredients list for Fruity Cupcakes
- 2 Bananas
- 3 Eggs
- ¾ cup Castor sugar (caster sugar)
- 1 cup Walnuts roughly chopped
- ¾ cup Butter
- 2 cups Refined flour (maida)
- 1 teaspoon Soda bicarbonate
- 1 teaspoon Cinnamon powder
- For crumble
- ½ cup Butter
- 1 teaspoon Cinnamon powder
- ½ cup Walnuts roughly chopped
- 4 tablespoons Castor sugar (caster sugar)
- 4 tablespoons Refined flour (maida)
Method
- Preheat oven to 180º C.
- Break eggs in a bowl, add sugar and beat with electric beater till the mixture is creamy.
- Sieve together refined flour, soda bicarbonate and cinnamon powder into the bowl.
- Sieve together refined flour, soda bicarbonate and cinnamon powder into the bowl.
- To make crumble, put butter in another bowl, add cinnamon powder, walnuts, sugar and refined flour and mix well.
- Put the banana-egg mixture into silicon cupcake moulds,place them on a baking tray, top with the crumble. Placethe tray in the preheated oven and bake for 30-35 minutes.
- Remove cupcakes from the moulds, arrange on a serving plate and serve hot.
