Fluffy Omelette

Ingredients 

  • 12 eggs
  • 4 tablespoons butter
  • Salt to taste 
  • Crushed black peppercorns to taste
  • Chives to garnish
  • Red cherry tomatoes to serve

Method

  1. For each omelette, break 3 eggs, separate the yolks and whites and put them in 2 different bowls.
  2. Whisk the yolks well. Beat the whites with an electric beater till light peaks are formed. Add the yolks to the whites and mix well.
  3. Heat a non-stick pan, add the eggs and let them cook. When the underside is cooked slightly, lift it and slide in 1 tbsp butter. Cover and cook on medium heat for 2-3 minutes.
  4. Sprinkle salt and crushed black peppercorns over the omelette and cook for a minute.
  5. Fold it in half, place it on a serving plate and chop some chives over it. Serve hot along with red cherry tomatoes.
