Ingredients list for Fish with Roasted Garlic

  • 2 Basa Fish Fillets cut into two pieces each
  • 8-10 Baby Brinjals
  • 10-12 Large garlic cloves peeled
  • 1 medium Red capsicum
  • to taste Salt
  • to taste Crushed black peppercorns
  • 2 tablespoons Olive oil
  • 1 Lemon
  • Juice of ½ lemon
  • 6-8 Fresh basil leaves

Method

  1. Preheat oven at 200º C.
  2. Cut red capsicum into small pieces and put into a bowl.
  3. Halve baby brinjals and add to the same bowl. Add salt, garlic cloves, crushed peppercorns and 1 tbsp olive oil and mix well.
  4. Grate the rind of the lemon and add and mix well.
  5. Keep the bowl in the oven and cook till the brinjals become soft. Remove from the oven.
  6. Increase the temperature of the oven to 220º C.
  7. Place fish in a cake tin, add lemon juice, crushed peppercorns and remaining olive oil and rub well. Put the tin in the preheated oven and bake for 12-15 minutes.
  8. Mix basil leaves and roasted vegetables in a bowl.
  9. Transfer the mixture onto a serving platter and top with baked fish and serve immediately.
