Ingredients
- 2 cups gram flour
 - ½ tsp turmeric powder
 - Salt to taste
 - ¾ tsp red chilli powder
 - 1 tsp papad khar
 - 1 tsp carom seeds (ajwain)
 - 3 tbsps oil + for greasing + for deep frying
 - Fried green chillies to serve
 - Raw papaya chutney to serve
 - Tea to serve
 
Method
- Take gram flour in a parat, add turmeric powder, salt, red chilli powder and papad khar. Crush carom seeds between your palms and add. Add 3 tbsps oil and mix well.
 - Add sufficient water and knead into soft dough. Cover with a damp muslin cloth and set aside for 30 minutes.
 - Slightly knead the dough, take a portion of the dough and shape it into a cylinder, cut into equal portions and shape them into oblong.
 - Grease the worktop with some oil, press and stretch with the heel of your hand into long strips. Scrape the bottom using a knife and pick it up from the worktop.
 - Heat sufficient oil in a kadai, slide in the fafdas into hot oil and deep-fry till crisp. Drain on absorbent paper.
 - Serve with fried green chillies, raw papaya salad and tea.
