You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Egg Sandwich Recipe

  • Eggs boiled and peeled 4

  • Brown bread slices 4

  • Butter softened 3 tablespoons

  • Salt to taste

  • Black peppercorns crushed to taste

  • Spring onion green stalks chopped 2

  • Tomato ketchup to serve


Step 1

Take butter in a bowl, beat it with an electric beater till it becomes light and fluffy.

Step 2

Grate the eggs into the bowl, add salt, crushed black peppercorns and spring onion greens and mix well.

Step 3

Keep the brown bread slices on the worktop and evenly spread a generous portion of egg mixture on 2 slices. Cover each slice with another slice and press lightly. Trim the edges of the breads and halve each sandwich vertically.

Step 4

Arrange the sandwiches on a serving plate and serve immediately with tomato ketchup.
