Ingredients
- 3 knolkhol medium sized pieces
- 1 tbsp mustard oil + to deep fry
- 2 cloves
- 2 black cardamoms
- 1/2 teaspoon cumin seeds
- 1 1/2 teaspoons red chilli powder
- 2 teaspoons fennel seed (saunf) powder
- 1/2 teaspoon dry ginger powder (soonth)
- Salt to taste
Method
- Separate nolkohl leaves, wash thoroughly and chop them. Peel and wash the vegetable and slice thinly into semi-circular shapes.
- Heat sufficient oil in a kadai and deep fry the slices till brown. Drain onto an absorbent paper. In another kadai, heat one tablespoon of oil.
- Add cloves, black cardamoms, cumin seeds, red chilli powder and one-cup water. Add fried nolkohl, fennel powder, dry ginger powder and salt. Add the leaves. Bring to a boil and cook covered till done. Serve hot.
