Ingredients list for Dark Chocolate Fudge Cake with Dark Chocolate Gana
- 225 grams Dark chocolate melted
- 75 grams Refined flour (maida)
- + for greasing Butter 225 grams
- 325 grams Castor sugar (caster sugar)
- 1 teaspoon Vanilla essence
- 200 grams Almond powder
- 1 teaspoon Baking powder
- Dark chocolate ganache:
- 100 grams Cocoa powder
- 125 grams Butter
- 175 grams Castor sugar (caster sugar)
- 275 grams Icing sugar
- 6 Eggs
Method
- Preheat oven to 160ºC. Grease a baking tin with some butter and line it with a parchment paper.
- Cream together butter and castor sugar in a bowl.
- Break the eggs, one by one, add the yolks to the butter mixture and put the whites in a separate bowl. Whisk the egg yolks with the butter mixture well. Add melted dark chocolate and vanilla essence and whisk again. Add almond powder and fold in well.
- Sieve together refined flour and baking powder into the bowl and fold in well.
- Whisk egg whites with an electric blender till light and fluffy. Add to the chocolate mixture, a little at a time, and fold in well.
- Pour the batter into the prepared tin and level it out. Place the tin in the preheated oven and bake for 1 hour.
- Demould and discard the parchment paper. Set aside to cool.
- To prepare dark chocolate ganache, pour 100 ml water into a bowl. Add butter and castor sugar and cook on a double boiler till butter melts and the mixture gets a syrupy consistency.
- Sift icing sugar and cocoa powder into another bowl. Add the melted butter and whisk well. Pour the ganache over the cake and spread evenly.
- Serve.
