Ingredients list for Curried Egg Sandwich
- 4 Eggs boiled and peeled
- 2 teaspoons Curry powder
- 8 Brown bread slices
- ½ Red chilli flakes
- to taste Salt
- 1 Spring onion with greens, finely chopped
- as required Mayonnaise 2 tablespoons +
Method
- Take eggs in a bowl and mash using a fork. Add chilli flakes, curry powder, salt and spring onion with greens and mix. Add mayonnaise and mix well.
- Spread some mayonnaise onto the bread slices. Top 4 slices with a portion of the egg mixture and spread evenly. Cover with the remaining slices, mayonnaise side down.
- Cut into triangles and serve immediately with banana wafers and tomato ketchup.
