Ingredients
- 4 medium potatoes
- Salt to taste
- 2 tablespoons olive oil
- 1/2 teaspoon mixed herbs
- 1/2 teaspoon crushed black peppercorns
Method
- Preheat oven to 200ºC. Heat sufficient water in a deep non stick pan.
- Quarter the potatoes vertically, cut into ½ inch cubes.
- Add them to the water with salt and parboil. Line a baking tray with a silicon sheet.
- Drain the parboiled potatoes well and put them back in the pan and cook till dry.
- Drizzle olive oil over them. Sprinkle mixed herbs, crushed black peppercorns and salt and mix well.
- Spread them on the tray and roast them in the preheated oven till crisp.
- Serve hot.
