Crusty Fish Sandwiches

Toasted pavs filled with cheesy paprika-seared fish, tartare sauce, and fresh alfalfa sprouts are a crunchy, savoury delight served hot with crispy potato wafers. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 6-8 basa fillets, cut into cubes
  • 4-6 brown pavs
  • Salt to taste
  • 1 tablespoon paprika powder
  • 1 teaspoon crushed black peppercorns
  • Refined flour (maida) for dusting
  • 2 tablespoons olive oil 
  • Parmesan cheese as required
  • Tartare sauce as required
  • ¼ cup alfalfa sprouts
  • Potato wafers to serve

Method

  1. Preheat the oven to 180°C.
  2. Place pavs on a baking tray and put in the preheated oven and toast for 3-5 minutes.
  3. Place fish cubes on a worktop. Sprinkle salt, paprika powder, and crushed peppercorns on top and rub them well on the fish pieces.
  4. Dust the fish pieces with refined flour and coat the pieces evenly.
  5. Heat a non-stick tawa. Drizzle olive oil on it and place fish pieces. Sear fish till evenly done from both the sides.
  6. Grate some Parmesan cheese on the fish pieces and flip them fish pieces. Sear further till the cheese melts and forms a layer on the fish pieces.
  7. Take a toasted pav and cut into halves. Spread a spoonful of tartare sauce on the base and on the top slice too. Place two seared fish pieces on the base. Put some alfalfa sprouts on top and cover with other side. Assemble remaining sandwiches in a similar way.
  8. Secure sandwiches with a toothpick and serve immediately with potato wafers.
