Ingredients list for Crunchy Peanut Cookies
- 1/2 cup Refined flour
- 2 tablespoons Peanut butter crushed
- 3/4 cup + Refined flour (maida)
- 1/2 teaspoon Cinnamon powder
- 1/4 teaspoon Soda bicarbonate
- 1/2 cup Rolled (porridge) oats
- 3/4 cup + Castor sugar (caster sugar)
- 1 tablespoon Golden syrup
- 1/4 cup + Desiccated coconut
- 1 teaspoon Lemon rind grated
Method
- Place the refined flour in a bowl. Add cinnamon powder, soda bicarbonate and mix.
- Add peanut butter, crushed roasted peanuts and oats and mix.
- Add caster sugar, golden syrup and desiccated coconut and mix.
- Add grated lemon rind and a little water and mix into a soft dough.
- Wrap the dough in cling film and refrigerate for half an hour. Preheat the oven to 180°C/350°F.
- Take the dough out of the refrigerator and divide into small marble sized portions and shape into balls.
- Flatten each ball and place them a silicon baking sheet.
- Keep this sheet on a baking tray and bake in the preheated oven for fifteen minutes or until light golden brown.
- Remove from the oven and transfer the cookies to a wire rack to cool.
- Store in an airtight tin.
