Ingredients list for Creole King Fish
- 4 King fish cut into 1 inch thick slices
- 2 tablespoons Lemon Juice
- 4 medium Tomatoes
- 1 medium Onion sliced
- 6-8 cloves Garlic finely chopped
- 1 Green chilli broken into 2
- 1/2 teaspoon Dried oregano
- 1/4 teaspoon Dry Basil
- 1/4 teaspoon Dried thyme
- 1 teaspoon Tabasco sauce
- to taste Salt
- 1/4 cup Fresh coriander leaves roughly chopped
- 1 teaspoon Oil
Method
- Roughly chop two tomatoes and puree the rest in the blender until nearly smooth. Set aside. Pat dry the fish slices with a absorbent kitchen cloth. Apply lemon juice and keep for five to ten minutes. Cook chopped tomatoes, pureed tomatoes, onion, garlic, green chilli and one cup water in a non-stick pan over medium heat for five to seven minutes, stirring frequently.
- Reduce heat and stir in oregano, basil, thyme, Tabasco sauce and salt. Cook for three to four minutes, or until liquid is reduced and sauce thickens, stirring frequently. Remove from heat and stir in coriander leaves. Cover to keep warm.
- Heat a non-stick pan, brush it with oil and place King fish slices. Cook on medium heat, turning once, for four to six minutes, or until fish is firm and opaque and just begins to flake. Serve each fish slice topped with about three tablespoons of prepared Creole style sauce.
