Ingredients list for Corn Pudding
- 1 tin Sweet corn
- 3-4 Spring onions
- 2 tablespoons Butter
- 1 tablespoon Olive oil
- 2 teaspoons Refined flour (maida)
- 1 cup Milk
- to taste Salt
- 3 Eggs
- to taste Crushed black peppercorns
Method
- Preheat the oven to 180°C. Chop spring onion greens and bulbs. Heat butter and olive oil in a non stick pan. Add refined flour and saute till raw smells disappear but flour does not get coloured.
- Add milk, little by little, and stir well to prevent lumps. Add spring onion greens and bulbs and mix well. Cook till the sauce thickens. Transfer the sauce into a bowl. Drain and add sweet corn and mix well. Add salt and mix.
- Break eggs into the bowl and mix well.Pour the batter into a baking dish. Sprinkle some sweet corn on top and bake in the preheated oven for ½ hour. Cool, slice and serve.
